Yep. Its the only way to describe this bread recipe. It works every single time and when they come out of the oven…well they are just too freaking good. We have passed on this recipe to many friends and family who always have the same result- light, fluffy bread that lasts well, freezes brilliantly and… actually, lets not kid ourselves- this bread hardly EVER makes it to the freezer. Once they come out of the oven, you just have to shove that stuff straight in to your mouth slathered in lashings of salty butter- and vegemite if you can be bothered to wait that long. Every time Chadd comes home he does a big bake up, adding to the collection of bread stuffs Ive been baking whilst he’s been gone. Today on the agenda was 50 vegemite and cheese scrolls, 2 large loaves of bread, 3 dozen rolls, and a dozen cheese and bacon rolls, along with 8 ham and cheese pizza breads. So, you know, just your regular Thursday morning bake session. This recipe is the same no matter what bread stuffs you make. Ive even used it for naan bread and the other day I made a stuffed Rosemary, Onion and Cherry Tomato loaf. I came home bang in the middle of the vegemite and cheese scroll baking, so I quickly grabbed my camera to take a few (lots) of pics for you. AND Im also going to share the recipe with you! Yay! For now though, here’s some little beauties resting quietly.
After the dough has been rested, it’s all in the punching. And if you have a feisty little three year old on hand, they are the best little people to do this step. Scarlett LOVES this bit and hangs around till she can PUNCH that dough down.
After the punching, its all in the rolling. This is what we always had in the back of our minds when we renovated our kitchen. A big, clear bench space that can be used for rolling out dough, prepping big dinners and eating communal meals.
Vegemite scrolls are my absolute fave. They are easy little additions to the kids lunch boxes- I just grab them straight out of the freezer and by the time they get around to eating them, they are fully defrosted. Easy! In the pictures above and below, Chadd is spreading some vegemite over the flattened out dough and grating cheese over it all, before he rolls them up and cuts them out in to little scrolls.
While you are waiting for them to rise, I suggest taking pictures of your cheeky little three year old (if you have one of them on hand)…
Once, the hour is up, pop the scrolls in to the oven for about 20 minutes on a moderate setting until browned slightly.
And then eat those mother freaking white rolls until your stomach bursts and you cant stand the sight of another piece of bread for at least another hour or so… And now for the best bit-
